Recipe: Stuffed Tomatoes

Made dinner with mostly home grown foods tonight. Here's the recipe:
1 chicken breast
1 can of corn
1 can of black beans
1 bag of microwave rice

Added from the garden:
6 large Tomatoes
Parsley
Thyme
Garlic Clove
Pepper

How to make it:
Dice and cook the chicken. Cook rice according to the packaging instructions. Drain the corn and beans. Toss the chicken, rice, corn and beans in a large bowl. Add fresh spices according to taste. Cut the tops off the tomatoes and spoon out the meat and seeds leaving a hollow "bowl". Fill tomatoes with stuffing, serve and enjoy. Also tastes great on tortillas or chips.
